Spicy Texas Barbecue Sauce

In the great state of Texas you’ll find spicy barbecue sauce, often enhanced with fresh hot peppers. This particular sauce gets its kick from a chopped serrano pepper and is definitely not for the faint of heart. You may want to have a cold drink nearby. (Feeling timid? Substitute for the serrano a jalapeno or an even milder poblano pepper.)

  • 4 tablespoons butter
  • 1/4 cup minced onion
  • 1 serrano pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup ketchup
  • 1/2 cup cider vinegar
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons prepared spicy mustard
  • 2 tablespoons honey
  • 1 tablespoon paprika
  • 1 teaspoon red pepper flakes
  • 2 tablespoons chili powder
  • 1 tablespoon lime zest
  • Salt and pepper to taste

  1. In medium saucepan, melt butter over medium heat. Add onion, serrano pepper, and garlic. Sauté until lightly browned. Add chicken broth, and stir until well blended. Add remaining ingredients, stir, and simmer for about 15 minutes. Store in the refrigerator until ready for use.
